The grapes for this chardonnay originated from the TOKARA farm and were hand picked at optimal ripeness from the 11th February to the 13th March. The grapes were treated in various ways - either whole bunch pressed, de-stemmed, crushed and pressed, with or without maceration depending on the quality of the fruit. The wines spent 11 months in barrels, of which 50% were new French oak from Burgundy coopers and the balance being 2nd and 3rd fill barrels.
This wine has a freshness and exuberance on the nose which leaps from the glass – a floral note which leads to a limey character, carried onto the palate. The citrus builds to a whole range of fresh fruits including hints of peach and grapefruit, finishing with a lovely fresh, long finish. This is a great wine with any full flavoured fish, poultry or pasta, particularly those in a creamy sauce.
