The Peller Family Estates Cabernet Franc Icewine is a truly unique dessert wine. Naturally frozen Cabernet Franc grapes are hand harvested at temperatures of -10°C. At the winery the grapes are pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain the fruit concentration (a short skin contact for colour and complexity), then 70% of the wine is aged in stainless steel.
The result is a dessert wine that is deep salmon pink in colour with an aromatic bouquet of rhubarb, raspberry, blackberry and a touch of herbal spice. The palate is rich with wonderful fruit flavours of red berries, rhubarb, red currants, spice and pomegranate that lead to a long lingering finish. Soft delicate tannins and the perfect balance of sweetness and acidity provide a truly great mouth-feel.
This is a fantastic dessert wine to enjoy after a meal with summer fruit based desserts or dark chocolate (or both combined!)
