Fruit for the 2006 Seresin Pinot Gris comes from the ‘Home’ vineyard which surrounds the Seresin winery. Fifteen different parcels of Pinot Gris were hand picked and sorted before being whole bunch pressed and then lightly settled. Both selected and indigenous yeasts were used for fermentation, which was maintained at a slow rate by low temperatures to enhance the primary fruit characters. The wine was transferred to older French barriques to finish fermentation and then to sit on yeast lees for four months before bottling and release.
The final wine exhibits aromas of apple, pear and citrus fruit with hints of spice. On the palate the wine is richly textured with notable stone fruit flavours and creaminess from its period of lees contact, which is nicely balanced by a level of crisp, fresh acidity.
