The 2006 Sauvignon Blanc from Seresin is made from 95% Sauvignon Blanc and 5% Semillon grapes. Twenty different parcels of fruit from different vineyard blocks were whole-bunch pressed and then fermented separately so that the winemaker had a greater range of options when creating the final blend. Indigenous yeasts and a selection of cultured yeasts were utilised for fermentation, for added complexity and texture. A small percentage of the blend, approximately 10%, was fermented in older French barriques to add depth, which when combined with regular batonnage, contributes a yeasty creaminess to fill the mid-palate.
The resultant final wine is another excellent example from the Seresin stable. This sauvignon blanc displays passion fruit and herbaceous characters on the nose with a flinty mineral complexity. The mouth feel is very finely textured with tropical fruit, ripe gooseberry, and citrus with a slight creaminess and persistent acidity to draw out the palate.
