At Clos de los Siete, as on the more prestigious French plots, the wine is totally harvested by hand. Moreover, the wine growers are lucky enough to not have to use pesticides, due to the very arid climate which prevents the development of grapevine diseases. But the great particularity of the Clos de los Siete is the process of winemaking using gravity. From pressing to bottling, and including the pouring of wine from vats to aging barrels, the entire process depends on gravity, using the weight of the raisin for downward movement in order to avoid using pumps. Pumps disturb the grape, and cause a brutal brewing which impacts the quality of the wine. To further improve the quality of the wine, the grapes, processed with the greatest care, pass through two double filters: grape by grape and cluster by cluster. The result achieved is nearly zero defects, a first in the history of Argentina.
The final blend for the wine is as follows: Malbec: 56 %, Merlot: 20 %, Cabernet Sauvignon: 12 %, Syrah: 10 % and Chardonnay (white): 2 %.
