The grapes for the Tokara Sauvignon Blanc originated from the Tokara Farm and were all hand picked. After fermentation the wine spent 6 months in barrel on the gross lees with regular lees stirring. All barriques are made of French oak – thirteen per cent are new from burgundy coopers with the remainder being five-year-old barrels.
The final wine is a very pale green, with hints of straw in the glass. This wine has a wonderfully complex nose – some grassy notes, a little smokiness and some subtle oak. The flavour is dry, full and round, with green pepper notes over the fruit, and an earthy character showing through on the finish, which persists for some minutes. For lovers of Cloudy Bay’s Te Koko, and Dog Point’s Section 94, this is a stunning example of barrel fermented Sauvignon Blanc!
