Domaine du Carrou is the personal estate of Dominique Roger; it is a 10 hectare estate in the village of Bué, considered to be one of the prime vineyard areas of the Sancerre appellation. Dominique represents the younger generation of vignerons, who are keen to combine tradition methods with more modern techniques.

He has a 'minimal interventionist' viticultural policy, only spraying or treating the vines when absolutely necessary, Dominique is also one of the few growers who still harvests all his grapes by hand. His obsession with quality is evidenced amply in his wines.

Dominique Roger has sourced grapes exclusively from vineyard sites around the town of Sancerre in the upper Loire valley. After handpicking, the grapes are lightly pressed and chilled immediately upon reception at the winery. Fermentation is in steel tanks and temperature controlled in order to preserve the varietal flavours of the Sauvignon Blanc grapes. No oak is used and the wine is filtered and fined before bottling.
