Domaine Louis Michel currently works with 21 hectares of vineyards, many of them the Premier and Grand Cru vineyards of Chablis. Until as recently as the 80's, Jean-Loup Michel (the Winemaker) fermented and aged his wines in old oak barrels, today, however, there is a more modern approach and all the wines are fermented in stainless steel with varying lengths of contact with the lees to add complexity.

This protective approach allows for a much fresher expression of the Chardonnay grape, and crisper, cleaner wines throughout. Today, Domaine Louis Michel's wines offer benchmark (in the most positive sense), unoaked Chablis.

This Domaine Louis Michel 1er Cru wine is sourced exclusively from the 1er Cru Montee de Tonnerre vineyard in the heart of Chablis. 100% Chardonnay grapes are all harvested by hand as too is the sorting of grapes at the winery; any berries that have the slightest hint of rot or un-ripeness are discarded. Fermentation takes place in temperature controlled stainless steel with the wine resting on lees for a short time to add complexity. ..
