A perfectionist in the vineyards and cellar, Christian Sérafin takes great care not to manipulate his wines, no filtration or fining is carried out here. Severe cut backs in the vineyard guarantee low yields and a late harvest (he is consistently the last to harvest in Gevrey) ensures ripe structured wines which can cope with abundant use of oak.
