The TOKARA property was acquired by GT and Anne-Marie Ferreira in 1994 and is situated on the Simonsberg Mountain in Stellenbosch. The property consists of various sections of older estate’s, each with its own fascinating history - the oldest part of the estate situated on the southern slopes of the Simonsberg Mountain was once part of the first established farms in South Africa with records dating back to 1685.
The dramatic Simonsberg mountain is a breathtaking backdrop to the architecturally award winning winery and on a clear day it is possible to see right across False Bay to Table Mountain whilst enjoying a fine meal at the award winning TOKARA restaurant.
Nothing is done at TOKARA without an eye to the ultimate, highest possible quality of the wine and to this end it was only in 2005 that the TOKARA range was released to the eagerly awaiting wine-drinking world. Although relatively youthful with only the second vintages released in 2006, TOKARA has won many plaudits, medals, trophies and, importantly, recognition from the trade and consumers to put it firmly among the best that the South African Cape has to offer.
Viticulturalist Aidan Morton uses a combination of traditional methods and cutting edge analysis to ensure pristine fruit quality is achieved in the vineyards. This includes: high density planting, limited yields and green harvesting - supported by NDVI vineyard analysis, which TOKARA pioneered in South Africa.
NDVI uses visible and infra-red light emissions, captured in a small two-man aircraft, to describe colour index variances throughout the vineyard, enabling the grapes to picked, by hand, according to optimum ripeness by vine and not by row or block!

| The TOKARA Cabernet Sauvignon is rich, opaque plum in colour, with a red rim. The nose is pure Cabernet fruit, with great depth; hints of plums, fennel and lead pencil show off the purity of aroma, with a little dark chocolate thrown in for good measure.
The wine is only now hitting its stride, with firm yet rounded tannins and a lovely mouth feel – it develops on the palate and leaves with a wonderfully satisfying melange of fruit and subtle .. |

| The Tokara varietal Chardonnay is a white wine matured for approximately 10 months in French oak; 25% of which was new oak, the remainder 2nd, 3rd, and 4th fill.
Light straw in colour this style of Chardonnay has aromas of white peach, spice and lemon blossom with a subtle oak spice. The palate is full and flavoursome with spicy mineral characters great balance and elegance with perfectly integrated oak.

| The TOKARA Directors Reserve White is a blend of Sauvignon Blanc (72%) and Semillon (28%). The Semillon grapes are from a single block of vines and the Sauvignon Blanc from the highest two vineyards on the TOKARA property.
Picked at optimum ripeness the grapes were all de-stemmed, crushed and pressed. After settling overnight the juice was run off into barrel with a certain percentage of lees added back. The Sauvignon Blanc portion was sulphur .. |

| Grapes for the TOKARA Red Cabernet blend originated from TOKARA’s premium vineyards on the slopes of the Simonsberg Mountain. The grapes were picked at optimal ripeness, de-stemmed, then passed across a sorting table for the removal of all unwanted material; they were then crushed directly into tanks for fermentation without the use of pumps.

| Like many successful and popular styles of Sauvignon Blanc (particularly the early New Zealand styles) the Tokara Sauvignon Blanc has a small portion (4%) of Semillon blended in.
This wine has a brilliant, bright pale straw colour with a hint of green on the rim. On the nose intense aromas of freshly cut grass, figs and gooseberries are complimented by underlying notes of creamy brioche and tropical fruits.
