Olive oil is one of the most widely-used types of oil in cooking, however, the very best premium extra-virgin olive oils are best used for dipping or drizzling over fresh grilled bread and dressing over salads, fish and other lighter dishes.
Pressed from fresh olives the best olive oils have much in common with wine-making, whereby climate, soil and the way in which the olives are harvested and then pressed all play a part in the oils character. Olive oils are generally assessed using three criteria: Fruitiness, Bitterness and Pepperiness, all of which can vary depending on the oils origin and grade.
Extra Virgin Olive oil is made from the first cold-pressing of the olives and has a very low acidity rate (under 1%).
