Canadian wine is primarily produced in two provinces; British Columbia - mainly in the Okanagan Valley - and Ontario, where the Niagara Peninsula features prominently. Given the cushy tax breaks that Canadian wines get in their home market, it is of little surprise to find so few of them find their way into overseas markets. They play on an 'uneven field' at home, so when it comes to playing away from home they can not compete with what the rest of the world has to offer. As long as this situation continues there is little incentive for Canadian wine producers to bring their standard up to an international level. However, (thankfully!) a few producers are determined to compete on the world-stage and here at Hic! we are pleased to showcase their wines to an ever increasing discerning audience. In recent years Canada's wine industry has witnessed significant new investment in world-class wineries, both in Ontario and British Columbia. This, together with widespread new plantings of grape varietals, new technology, expanding exports and greater recognition of its ability to produce fine wines at competitive prices, has given Canadian wine greater market exposure. At 43 degrees latitude the Niagara Peninsula is within the same latitudinal range as Southern France, Rioja in Spain, Chianti Classico in Italy and Oregon on America's western coast. The Niagara Peninsula is the only place in the world where every single year the summers are so warm that thick skinned grapes such as Cabernet Sauvignon will ripen, but the winters are cold enough to make Icewine (but never so cold that the vines do not survive). The peninsula sits directly in between the lakes Ontario and Erie and it is these great masses of water which help regulate temperatures during the peak of summer and the extreme of winter.
